Getting my family to eat their peas...and me too!

A couple of weeks ago I was sitting with my Mother in law waiting for her doctors appointment.  As she looked through Better Homes and Gardens she said, "This recipe looks yummy!  You should try it."  When I saw the word,"Pea" in the title I thought, "No way."  I've never been a pea fan.  The only time I like them is when they are in my Mam-maw's overnight salad.  But then I saw the part about coconut and ginger and thought maybe I should give it a try.
So I did.  And you know what?  It was a hit!  Even my boys said, "Mom, I don't like peas, but they are really good like this!  Please make it again!!"  My boys?  Asking for Peas??  Green peas???

Since it was such a hit, I thought I would share it on here.


Sweet Pea Soup with Coconut and Ginger

2 Tbsp Canola Oil

1 small yellow onion

2 Tbsp minced fresh inger

2 garlic cloves minced

1/2 tsp. cayenne pepper

1 tsp. salt

2 cups water

1 can of coconut milk

10 oz package of frozen peas

chopped cilantro


Lightly saute onion, ginger, garlic, salt and pepper in the oil. Add the rest of the ingredients and simmer lightly for about 10 minutes. Using an immersion blender, blend the soup until smooth.  Top with chopped cilantro.   Enjoy watching your family eat their peas!
